Roasted white sweet potatoes with Za’atar will be your next favorite way to eat potatoes. The light sweetness of the sweet potatoes goes perfectly with the aromatic and nuttiness of Za’atar. Fresh lemon and parsley then give it a nice and bright finish.
- 2 white sweet potatoes chopped
- ½ onion sliced
- 1 ½ tbsp. olive oil, use some to grease baking sheet
- 1 tsp. chili olive oil
- 1 ½ tsp. Za’atar spice
- 1 tsp. garlic powder
- Salt and pepper to taste
- 1/2 lemon
- 1/4 cup fresh parsley finely chopped
- Set oven to 400° and grease baking sheet with some olive oil. Toss chopped potatoes and onion with olive oils and spices. Leave out parsley and lemon. Bake for 20 minutes, pull out, toss and bake for 20 more minutes. Once cooked, pull out and place into bowl with lemon and parsley and mix.
