Baked Italian Meatballs

I love making baked Italian meatballs and storing them in the freezer for future use. You just microwave them for a few minutes and add them to whatever you want. Sometimes I just eat them by themselves without anything else. Recently I made them and added them to my tomato and spinach risotto. Making your own meatballs is great because you control what goes in them.

Okonomiyaki (Osaka-Style)

Okonomiyaki is an iconic Japanese savory pancake made with flour, eggs, shredded cabbage, and your choice of protein (shrimp, mushrooms, mussels, whatever you like) and topped with a variety of condiments . It’s name translates to “what you like, grilled”. Depending on what region of Japan you are visiting there can be different variations of how this dish is prepared and served.

Instant Pot Chicken Tortilla Soup

As I sit down to write this recipe, I have just finished off my fifth serving of this soup over the past 5 days. You might ask, aren’t you sick of eating it? NO. Not only is it delicious and I have physically been craving it every day, but it also has saved me the time of having to cook the past few days. That’s the beauty of a hearty soup like Easy Instant Pot Chicken Tortilla Soup. Mind you, it’s only two of us eating it, so if you have a family of four, it’s probably not going to last as long.

Chicken Slimmer

I am naming this one after us Chicken Slimmer. This chicken dish represents all the things that Matt and I love: olives, salted meats, breaded chicken, cheese and a little bit of lemon. I have not seen or had this anywhere, but who’s to say it doesn’t already exist? After a quick Google search, I didn’t see it. Have I created something new for the entire culinary world to enjoy?!?!? Doubtful, but I’m rolling with it.
